The perfect description of a vegan diet and the title of the book by Kris Carr. She is a beaming representation of the vegan community and more specifically of the community of cancer survivors who are thriving on a vegan diet. She has kept her very rare form of cancer in remission for years now and has helped many many people survive a cancer diagnoses with her mostly raw foods based, vegan diet. I highly recommend everyone read her book! Especially if you suffer from any health problems at all, a vegan diet could seriously help you. I found her book on Amazon for only $15 including shipping, it’s usually $20-25 in the store. I haven’t been able to stop reading it since! I’m going to start her 21 day cleanse once I finish it.
I’ve been vegan for almost 3 1/2 years now and have been wanting to transition over to a more raw foods based diet, but it’s very hard for me because I love cooked food so much! My boyfriend and I started focusing on only eating whole foods this summer, meaning we buy things that come in a package as little as we can. I’m hoping this cleanse will get more onto a more raw based diet. She says that the goal is to consume a ratio of 80/20 or 60/40 with the higher amount being raw foods and the smaller cooked foods, I’m aiming for the 60/40 ratio because it seems pretty doable. Something else she mentions that I never gave any thought to is maintaining a balanced alkaline-acid diet. So many of the foods we eat, almost all of them in the Standard American Diet, are acidic which means we are seriously messing up the pH of our bodies, even changing this pH by one point can cause serious health problems. It’s believed that this leads to inflammation in the body which causes most health problems. This is where the hard part for me comes in, on this diet you are supposed to give up coffee because it’s very acidic, I’ve been drinking coffee since high school, and while I have always drank it black which gives you the most antioxidants, I used to drink way too much and have cut back to 1-2 cups per day. But working in a coffee shop is going to make it so much harder to quit completely! I think that will be the hardest part of the diet for me. But I’m still really excited because I really want to focus on being the healthiest I possibly can in every aspect of my life. Here’s to changes in this new year!
